Choosing when to harvest the olives is important, it affects the quality of the oil and its nutritional richness. Among autumn's agricultural work, the olive harvest stands out in many areas of Portugal, involving farmers and immediately after the mills that have the task of extracting the precious oil from the fruit. It is generally a characteristic activity from October, November or December, but the period varies according to the type of olive and the seasonal climate.
The most suitable degree of maturation varies depending on the use: if table olives grow they are harvested ripe, while to make olive oil it is better to remove them before complete maturation, otherwise you will obtain a more acidic oil, which loses most of its nutritional and aromatic properties. For the quality of the oil, therefore, it is very important to learn how to choose the right time for harvesting.
Even the harvesting method in the olive grove can determine a better or worse qualitative result, in fact, care must be taken not to damage the plant with tools dedicated to making the work easier. In fact, motorized harvesting machines or combing machines must be properly studied and used carefully so as not to mistreat the olive trees.
